Upon reading this thread about roasting a chicken, I got a hankering for it. Our local grocery was having a special so I got 2 4lb chickens, and roasted one this evening, and boiled the other for chicken salad. [More Inside]

Now, I know what you're thinking, boiled chicken is awful, right? But it
doesn't have to be. The Frugal Gourmet has a quick "recipe" for
boiling a
chicken that can not be beat, and I thought I'd share it with you, while
thanking the folks in the thread for many tips on a tasty roasted chicken
(we had it tonight with roasted potatoes and green beans and it was great)
In this recipe we do not actually boil the bird at all but rather place it
in boiling water and then leave it alone. Please read the instructions
carefully. This dish is so simple and so delicious that you will think the
instructions are incorrect.

Fill a large kettle with water, and bring to a boil. (An 8=quart pot two
thirds filled with water works great for a 2 1/2 to 3 pound bird). When
the water boils, place the whole cleaned chicken into it. When the water
stops boiling, take the chicken out. Cover the pot, and when the water
again boils, place the chicken back in the pot. Cover the pot and turn off
the heat. Leave the chicken in the pot and the pot on the burner. After 1
hour the chicken is done. Remove, and cool.

You can debone this chicken in very little time. If you are on a low
salt/fat diet, be sure to remove the skin. Save the juices that flow from
the bird when deboning becuase this liquid contains a great deal of
natural gelatin and will help keep the bird moist if you should decide to
store the meat in the refrigerator.

The chicken is ready to serve or use.

23skiddoo: I guess it depends on how it's done. Before I boiled a chicken the way above, I'd never had boiled chicken that I liked, it was always quite dry. Maybe it's just usuall overcooked (chicken often is in general)

Hmm... so basically, drop the chicken into the water for a few seconds? I'm assuming the water stops boiling right away? Then remove the chicken, bring the water back to the boil, then add the chicken back to the pot... and so on.

Actually you just dunk once, wait for it to boil again, then you drop it in, turn the heat off and leave it there for an hour. The beauty of this recipe, y6y6y6 is that the flavor stays in the chicken and you don't end up with chicken broth. The first dunk I am not sure of the meaning of, to be honest with you. But I do it anyhow, it's easy enough.

I guess this got some people hackles up or something. I was really just replying to an ask-meta thread saying I found it useful, and posted a little something extra to go along with it.

One more question... did the recipe mention anything about allowing the chickedn to come to room temperature first, instead of dropping it in there right out of the fridge?

Hmm, didn't mention it. I do it right out of the fridge. My wife would kill me if she saw me letting poultry come to room temp. (she's a registered dietician and has a masters in public health)
