Did a quick search, and it's kind of weird this was never posted to the front page *cough* that I can see. I've only found it in a comment or two in other threads. Fun place.

When living in Albuquerque long ago, I took a class in dialogue writing. The first assignment: go to the Frontier Restaurant and write down the conversations. Why? To find how scattered and disjointed actual speech is.
