Upon reading this thread about roasting a chicken, I got a hankering for it. Our local grocery was having a special so I got 2 4lb chickens, and roasted one this evening, and boiled the other for chicken salad. [More Inside]

Yeah, I forgot that burlyadventurer was gone. The jerkengine problem is new to me, looks like there's some kind of DNS issue. It's been a while since I looked at or updated my page.

23skiddoo: I guess it depends on how it's done. Before I boiled a chicken the way above, I'd never had boiled chicken that I liked, it was always quite dry. Maybe it's just usuall overcooked (chicken often is in general)

Fill a large kettle with water, and bring to a boil. (An 8=quart pot two thirds filled with water works great for a 2 1/2 to 3 pound bird). When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out.
Hmm... so basically, drop the chicken into the water for a few seconds? I'm assuming the water stops boiling right away? Then remove the chicken, bring the water back to the boil, then add the chicken back to the pot... and so on.

Actually you just dunk once, wait for it to boil again, then you drop it in, turn the heat off and leave it there for an hour. The beauty of this recipe, y6y6y6 is that the flavor stays in the chicken and you don't end up with chicken broth. The first dunk I am not sure of the meaning of, to be honest with you. But I do it anyhow, it's easy enough.
I guess this got some people hackles up or something. I was really just replying to an ask-meta thread saying I found it useful, and posted a little something extra to go along with it.

Hmm, didn't mention it. I do it right out of the fridge. My wife would kill me if she saw me letting poultry come to room temp. (she's a registered dietician and has a masters in public health)
