Oh man, that was my one birthday wish this year. I'd never seen or heard of red velvet cakes until a southern friend had one as her wedding cake. They look amazing, even if it's just red food coloring combined with white cake from a box mix.

Matt, I would send you a red velvet cake but I don't have the bandwidth.
Instead, my red velvet cake recipe:
1/2 cup unsalted butter
1 cups sugar
2 eggs
2 teaspoons vanilla
1 teaspoon salt (omit if you used salted butter!)
2-1/2 cups flour
1/4 cup cocoa
1-1/2 teaspoons baking soda
1-1/2 teaspoons baking powder
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup buttermilk (If you can't find buttermilk, make your own sour milk by combining 1 tablespoon white vinegar with 1 cup milk and letting it stand at room temperature for 15 minutes. But it's better with the buttermilk.)
2 tablespoons red food coloring (or a whole one of those little vials)
1 tablespoon white vinegar
Preheat oven to 350°F. Grease and lightly flour two 9-inch round cake pans. Cream butter and sugar together; add eggs, one at a time, beating well after each addition. Add vanilla to mixture.
Combine flour, cinnamon, nutmeg, cocoa and baking powder in another bowl; add a little at a time to the butter/sugar/egg/vanilla mixture, alternating it with the buttermilk; be careful not to overbeat.
Dissolve the baking soda in vinegar; try not to get lost in reminiscences of 3rd grade "volcano" science projects. Pour the red food coloring into the baking soda mixture and stir gently. Fold the bloody, fizzy mixture very, very carefully into the batter. Stir the whole thing together very, very gently until it is combined.
Pour the batter gently into your prepared baking pans and bake about 30 minutes or until cake springs back when lightly touched with finger. Cool in pans on wire rack for five minutes. Remove from pans and cool completely before frosting.
The key a delicious velvety texture is to handle everything gently! Especially once the baking powder is in.
